Inspired by the fermentation and distillation process and the parallels to biochemistry, David Perkins decided to create his own distillery. In 2004 he and his family moved to Park City, Utah to start their new business. Distillation began in 2007. High West Campfire matured for an indefinite period in a combination of ex bourbon casks and fresh American
